Virgin Citrus Sangria

Yesterday we had some friends over and I whipped up this Citrus Sangria. Now I’ll be honest I eyeballed this whole recipe, but this is roughly what I used measurement-wise.

Ingredients:

  • 2L Pitcher
  • 1/3 of a 1L bottle of 7up
  • 2 Lemons (sliced)
  • 1 Lime (sliced)
  • 1 Large Grapefruit (cut into quarters)- you could just use a bottle of grapefruit juice but I had actual grapefruits on hand so I used fresh squeezed juice.
  • 1/2 a can of Pineapple chunks (with juice)
  • 2 tbsp Grenadine
  • About 2 cups of Ice (more or less depending on your preferences)

Directions:

  1. In a 2L pitcher, dump in the ice
  2. Pour in the 7up, pineapple chunks (with juice), and the grenadine.
  3. Give that a stir, then add the lemon and lime slices.
  4. Next, squeeze in juice from each quarter of grapefruit (or pour in about 3/4 cup of grapefruit juice)
  5. Stir, pour into serving glass and enjoy!

*Garnish with a slice of lemon or lime.

Pesto Chicken and Asparagus

Looking for a good recipe to make for your family on a week night or even to make for you and your special someone for date night? Well here’s a quick fool proof recipe for you!

Here’s what you’ll need.

  • 1/4 cup Basil Pesto
  • 1 pound Boneless chicken thighs
  • 1 pound Asparagus
  • 1 cup Cherry Tomatoes
  • 2 tbsp Olive Oil

Next, in preparation you’ll need to:

  1. Trim ends of asparagus and if larger in size, cut them in half.
  2. Slice chicken thighs into strips
  3. Halve all tomatoes

Final cooking Directions:

  1. Over Medium heat, add the olive oil and sliced up chicken thighs to a large skillet.
  2. Season generously with salt and add in the asparagus and pesto. Cook about 5-10 minutes.11
  3.  Add tomatoes to chicken, asparagus and pesto mixture. Cook another 5-10 minutes. 7 (if you want to make sure your asparagus is on the softer side, cover with lid during the 5-10 minutes)
  4. Serve on plate and enjoy.

Cashew Chicken

Over the past few weeks I’ve been getting asked to do a lot of one-pan meals, Keto friendly meals, and quick & easy chicken meals. Well, I think this one hit the nail on the head by being all 3!  And it’s a tasty one also so everyone can enjoy.

I’d decided that for 2018 I would try to find and develop recipes, with wholesome ingredients, to take the place of take-out food for our family.

So here is my first of many AT-Home recipes:

Cashew Chicken

Ingredients:

  • 4 raw chicken thighs (boneless and skinless)
  • 2 tbsp canola oil
  • 1/3 cup of cashews
  • 1 medium bell pepper
  • 1/2 tsp ground ginger (I used Fresh ginger)
  • 1 tbsp rice wine vinegar
  • 1 1/2 tbsp soy sauce
  • 1/2 tbsp chili garlic sauce
  • 1 tbsp minced garlic
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds
  • 1 tbsp green onion
  • 1 medium white onion
  • salt and pepper to taste

Directions:

  1. In a large pan, over low heat, toast Cashews until they turn lightly brown and become fragrant. (remove and set aside)
  2. Dice up chicken thighs, onion and bell pepper into 1 inch chunks.
  3. Turn up the heat on the stove to medium high heat, and add the chicken. Let that cook until chicken is no longer pink in color. (5 or so minutes)
  4.  When the chicken is no longer pink, add the onions, pepper, garlic, garlic sauce, ginger and salt & pepper. Allow to cook for 2-3 minutes
  5. Add remaining ingredients (Soy Sauce, rice wine vinegar and cashews) and cook until all the liquid in the pan is completely gone.
  6. Serve with drizzled sesame oil and sesame seeds on top.  Enjoy!

 

 

 

 

 

Alfredo Pasta Bake

Ingredients:

  • 1 16 oz box Rotini pasta
  • 1 jar of Alfredo Sauce (I used the Classico brand)
  • 2 8oz cans of chicken broth
  • Handful of parsley chopped (used for garnish)
  • 1 4-pack of Sausage (I used the Aidells chicken and pineapple, but any flavor you want should be fine, or just use a rotisserie chicken)
  • 2 cups Mozzerella Cheese

Directions:

  1. Preheat oven to 425 degrees.
  2. In a large bowl mix together the Rotini pasta, Alfredo sauce, chicken broth and sausage.
  3. Place in casserole dish and cover tightly with tinfoil. (this will allow the pasta to steam and fully cook)
  4. Place in oven and bake for 30mins.
  5. After 30 mins check to see if pasta is fully cooked ( add 10 minutes more if need be)
  6. If fully cooked, remove tinfoil, sprinkle with cheese and place back in oven for 10 mins until cheese is melted.
  7. Sprinkle with chopped parsley, serve hot and enjoy!

My Fall Off The Bone Ribs

Now who doesn’t love the idea of juicy tender meat that just falls right off the bone??

Well, my Fall of the Bone recipe is sure to give you ribs that have meat so tender and juicy that you can even eat them with a fork and knife and still clean the bone COMPLETELY!

So here’s what you’ll need!

Rib Rub Ingredients

For the Rib Rub you will need:

  • 2 tbsp Garlic Powder
  • 2 tbsp Onion Powder
  • 2 tbsp Chili Powder
  • 2 tbsp Cumin
  • 2 tbsp Smoked Paprika
  • 2 tbsp Brown Sugar
  • 1 tbsp Black Pepper
  • 1 tbsp Salt
  • 1 tsp Dry Mustard
  • 1/4 tsp Cayenne Pepper (the more Cayenne the more heat of course!)

Directions:

  1. Mix together all ingredients in small bowl.
  2. Sprinkle seasoning mix on all sides of the rack of ribs (prepare to get your hands a little dirty)
  3. Massage seasoning into meat to make sure it covers every inch of the meat (for maximum flavoring)
  4. Place rack on sheet of tinfoil (make sure the tinfoil is big enough to completely surround rack of ribs, as you will be making a pouch with it)
  5. Place pouch on baking sheet.
  6. Place in 275 degree and bake 2 hours (now would be the perfect time to prepare the BBQ sauce)
  7. Remove from oven, fold down sides of tinfoil pouch and slather the ribs with the BBQ sauce
  8. Place baking sheet with ribs back in oven and bake an extra 30 minutes.
  9. Slice up, serve and ENJOY!

My Homemade BBQ sauce:

  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • 1/4 cup Honey
  • 1 1/4 cup Ketchup
  • 1/3 cup Molasses
  • 1 tsp Dry Mustard
  • 1 tbsp Worcestershire Sauce
  • 3/4 cup Brown Sugar
  • 1/8 tsp Cayenne pepper
  • 1 tsp Salt
  • 4 tbsp Apple Cider Vinegar

Directions:

  1. In small bowl, whisk together all ingredients
  2. Serve on top of ribs or pulled pork, ENJOY!

Healthy Salad Dressing Recipes:

Lemony Salad Dressing:

  • Juice of 2 Lemons
  • 1 tbsp white vinegar
  • 1/2 tbsp Dijon Mustard
  • 1 Garlic Clove
  • 1/2 cup Olive Oil

– Whisk together, drizzle on salad and enjoy!

 

Homemade Greek Salad Dressing:

  • 1 tsp Basil
  • 2 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 2 tsp Oregano
  • 1 tsp Dijon Mustard
  • Pinch of pepper
  • 1/4 tsp sea salt
  • 1/4 cup Olive Oil
  • 1/2 cup Red Wine Vinegar

-Whisk together, drizzle on salad, and enjoy

 

Homemade Healthy Ranch Dressing:

  • 2 tbsp fresh Dill
  • 3 large Cloves of Garlic
  • 1tsp Lemon zest
  • 1/2 cup fresh Parsley
  • 1/4 cup Lemon juice
  • 1 cup Paleo Mayonnaise
  • 1 pinch of black pepper
  • 1/2 tsp Sea Salt

-Combine in food processor and blend until smooth consistency.
