Easy Eggs Benedict:
I call this a “Lazy Eggs Bennie” because I didn’t use all the ingredients that are used to make a traditional Eggs Benedict and I also took the liberty of preparing them my own special way using what I had in my kitchen and pantry.
The traditional recipe calls for using Canadian bacon, English muffins, hollandaise sauce and a poached egg.
My version; a Slice of bread (any kind will work as long as you toast it), a slice of thick cut ham, what I’d call a fried version of a poached egg (seasoned with salt, pepper and garlic powder), and a packet of hollandaise sauce (I used the Knorr brand packet you can find at the grocery store).
And there you have it! A Lazy Eggs Bennie!
