Lets be honest, sometimes leftovers aren’t fun.
We’ve all said it, “It’s the same food from last night” or “Are you sure it’s still good??”
Well, this might have been left overs from only yesterday but something that I find that I like to do is either spice up the previous recipe by adding new ingredients, or all together transforming the meal (in this case meat) into an ingredient used for a completely different recipe.
My husband was hungry and wanted a sandwich, but I knew we needed to use up the left over pork from last night. So that got my brain thinking. I grabbed whatever bread I had, some Mozzarella cheese from the fridge and some butter. I put the pan on the stove over medium heat, so it could start warming up. I cut the chunks of pork into thinner slices, and shredded the cheese. I buttered the bread on one side (each). I placed that in the pan (butter side down), layered the slices of pork on top and then sprinkled enough cheese so that when it melted it would cover the pork completely. Topped that with the second piece of bread (butter side up) and pressed it down to secure it. I let that cook till the underside was a light golden brown color. Then it was time to flip! (each side took about 2-3 minutes at most). After it was finished I removed it from the pan and cut it diagonally to serve.
I guess you could call this a Pork Grilled Cheese Sandwich, but whatever it was his reaction was “THIS IS AMAZING!” (Ladies and Gentlemen try it for a sandwich sometime if you have leftover meat! I’m sure you’ll get the same reaction!)
So all in all, leftovers aren’t as bad as we all sometimes think they are.
